video calling is better , but it is also necessary to trace the calls for organisation. Is there any way to do so without notify the caller for services like skype?

Any digital media travelling on the internet can be monitored and recorded, that is why security and encryption technologies are key for privacy. This equally applies to voice and video.

Regarding Skype calls, I have no reason to believe that they are safer than other calls, but I would invite you to review the security policy and decide if it meets your needs.
